Sanguisorba minor (Salad Burnet)Cucumber scented culinary ancientA UK native wildflower, Sanguisorba minor is often found growing in dry grassy meadows. Low rosettes of pretty, fern-like foliage are evergreen and give a wonderful splash of deer resistant winter colour. In summer, wiry stems rise above the foliage, each holding a red, unusually shaped, rounded bloom. Full of nectar and pollen, insects will visit to investigate and pollinate the plant so that burred fruits follow.Used for centuries as a herb, the foliage, when crushed, releases a cucumber aroma. Traditionally the young leaves were used as a flavouring in salads or cold drinks.Known by several common names, some of which are Salad Burnet, Garden Burnet and Pimpernelle. The blooms are a favourite of florists as they not only last well in a vase, they also add visual interest with their unusual flower shape.Sanguisorba minor prefers to be grown in well-drained soil in a sunny spot, where it will reach a height and spread of around 60cm. The RHS hardiness guide has rated it H6, which means that it is hardy to around -10 C. A perennial which will die back over winter to resprout again the following spring.
